Korea’s representative fermented food, kimchi, can relieve the symptoms of Corona 19.

The research team of the World Institute of Kimchi (Director Hak-jong Choi) and Jean Bousquet, an emeritus professor of the Department of Pulmonary Medicine at the University of Montpellier, France, said, “Sulfolapan (Chinese cabbage) rich in kimchi, Alisin (garlic), Capsaicin (Red pepper), and Ginger roll (ginger). Various nutrients and lactic acid bacteria generated during the fermentation process alleviate the symptoms of Corona 19 by blocking nerve channels that detect coronavirus infection-19 symptoms by controlling the antioxidant system in the human body.”

The research team tracked the reasons for the large variation in the incidence rate, severity of symptoms, and mortality rates of Corona 19 by country. In particular, it was noted that the mortality rate of Corona 19 was very low in East Asia such as Korea and African countries near the Sahara. Among the countries with low mortality rates, most of the countries except Australia and New Zealand showed a common feature of consuming fermented vegetables such as kimchi or a variety of spices.

The research team found that various nutrients and lactic acid bacteria abundant in kimchi interact with Nrf2, an antioxidant system in the human body, to remove harmful free radicals from the human body caused by Corona 19.

In addition, it was found that nutrient components that interact with Nrf2 are associated with the activation of transient receptor potential (TRP) that induces an inflammatory response in the human body. The nutritional ingredients of fermented vegetables such as kimchi and spices lose the activity of the TRP channel and have the effect of alleviating inflammation caused by Corona 19.
